Over the past few weeks, our Brad Vivacqua has been using your Facebook suggestions to check out some of your favorite restaurants around the region. So far, he's had breakfast, lunch and an appetizer. In this week's edition of On the Menu, Brad's ready for the main course.
ROME, N.Y. -- No matter where you live in Upstate New York, you don't have to go very far to get a great meal for dinner. Your recent Facebook feedback led us to Teddy's Restaurant on Black River Boulevard in Rome. That's where you can find the tasty chicken riggies, a dish Teddy's has become well known for.
Here at Teddy's, the chicken riggies have been the most popular dish on the menu since Teddy's opened 21 years ago. With me is Juan, who is one of the cooks here at Teddy's and he's going to tell us how the chicken riggies are made.
"To start making my chicken riggies, which is very, very famous here in Rome, we start with olive oil first, then we add some onions, white onions, green bell peppers, sauté that together. A little bit of garlic, mushrooms and black olives. Then I add my white wine and chicken stock and of course, I won't forget my chicken, which is grilled chicken,” Juan said. "What we have in the sauce is marinara, alfredo, romano cheese, white wine and parsley. Salt and pepper of course and that's what's in the sauce. And we have it ready in the morning and ready to go at night."
Juan continued, “At this point, the riggies are about to be done, so I put the sauce right on there. I have my boiling water going also, so I add my pasta to the pot. Always make sure the pasta is cooked al dente. Just a few seconds and then by that time the sauce is already nice and boiled, so I just add my pasta to it. I mix it up. Make sure all the pasta gets all the sauce. You've got all the flavor right in it. Plate it up, very nice. And that's my chicken riggies right there."
If chicken isn't what you're in the mood for, you can also get these riggies with steak or Italian sausage and the same delicious sauce.
Teddy's has won numerous contests for its award winning riggies, which can be made mild, medium, or hot. And there may be quite a few reasons they're so good.
"Not only are the ingredients, high quality ingredients, but also, obviously, a lot of restaurants don't use white wine. We do. We use fresh onions, peppers and we also use boneless chicken breast and I think the combination of all those ingredients is what makes it such a great dish," said Carlos Moran, co-owner of Teddy’s.
The riggies here at Teddy's make an excellent choice for lunch or dinner and after taking just a small taste of this popular pasta dish, it's likely you'll be back here again and again.
